Through the introduction of cambers in foil focused sails, the possibility of moving around and exploring a bit can be an interesting part of the foiling experience. I have certainly found that's true over the years with windsurfing/fin gear. I have no doubts that cambers offer greater upwind and downwind performance and open up your windsurfing venue a lot. Of course much depends on where you sail, and whether you want to extend beyond the normal range around the launch that the majority of sailors tend to stick to.

Regarding the breaching that can occur when powered up in the gusts or in heavier conditions, an argument can be made to focus on the fuselage and the wing sizes to better settle things out. That can translate to faster overall performance too.

Personally, not embracing the idea of "travelling" around on a 5' long, 90 liter board with a wing that can pop with any impact.
Ok, some real times.....
Berkeley Marina to TI and back..
Slalom windsurf, 38 minutes to, 18 minutes back.
Formula windsurf, 22 minutes to, 14 minutes back.
Windsurf foil race, 21 minutes to, 13 minutes back.
Rec windsurf foil to, 29 minutes to, nobody races back, they're riding windswells and goofing around.
Wingfoil ZLabs, 21 minutes to, 12 minutes back...
Not a huge difference, and rider skill is still 90% of the equation..
Not saying I can match those times.

And foiling can split to different camps.
Windsurf foils seem to go 70% race, 30% freeride.
Wingfoil seems 70% freestyle, 15% freeride, and 15% race.
Yes, there are outliers, but one out of 200 doesn't get my ratings.
