'07 Ezzy Infinity help?

245 lbs, light gusty winds, a giant wide board pushing water and a huge heavy sail, not a good combo is it? A 10M Speedfreak weighs about 12 lbs and the 9.5M Ezzy weighs about 12.5 as I recall so the 10.5 probably a little bit more. Plus that 550 won't work with the speedfreak.
I think you just need the pulley so you can play around with the settings and get it right. It will be interesting to see if you can get that Formula board going in San Diego at 245 lbs, I'll bet the other guys are 180 lbs, maybe you will need a longboard.

I think you guys are probably right, not enough downhaul. I've rigged up a temporary pulley with some spectra line and a harken block that I can use while I wait for a pulley hook to arrive.

@beaglebuddy - Actually I've now met 2 other guys about my size and both are on formula boards. One, older than me, is on the exact same Bic formula 170, the other on a custom Mikes Lab. The first uses a 10.5m Aerotech and the second a North 11m. What I have is pretty similar so it -should- work. I think I just need to adjust the sail properly and spend more time learning how to use this gear. It's way different from anything I've ever sailed before.

my BIC Techno Formula is 170 liters and 94 cm wide
some call this a FreeFormula
at 105+ kilos / 230 + pounds I use this board in 12+ knots
with a MauiSails TR-4 10-oh sail
this is a race sail with four(4) cambers
in that wind it is often just myself and the kites out
that sail size with cambers discussed here sounds right
sorry to hear such a large sail has ONLY a grommet
my sail feels heavy when there is NO wind or uphauling - prefer beach start
once hooked in and flying , it is LIGHT
with this combo and 58 cm weed fin or 66 cm slalom fin, this set flies
my buddy at the shop says it has a top speed limit, but that is okay for me
hope you get it all figured out cuz it can be a real blast !!!!

I took the 10.5 infinity out for another go today, wind was pretty light, maybe 6-12 mph. I jury rigged a small harken dinghy block since I didn't have anything else to put on the tack. A local formula racer helped me tune the sail a bit. As a result, the sail was much easier to handle and felt much friendlier than before. He said I could probably bring in the downhaul another few centimeters, which I'll try next time. So in all, lighter wind and more downhaul seemed to make a big difference for the better.

One thing to consider is the recommended mast is a 520 with a 550 the second choice. You are using a 550 so the mast is probably a bit stiffer than recommended meaning what exactly I'm not sure. Perhaps you will need more downhaul than spec to get the sail to twist off right.
Downhaul is recommended at 550 so can your extension go to zero? Using a Euro pin? if using a two pin US cup 8cm is usually as low as you can go.
That block also might keep you from getting enough downhaul as the block will be between the sail and the pulley on the extension.
It seems odd that Ezzy made a sail and there is no Ezzy mast that will fit it.

It says on the sail that luff is 553 and I have a short mast base that looks like I should be able to get it pretty close to that (with some effort).

Big guys actually want a stiffer mast, so the 550 is a great call if it's an appropriate flex.
