I never (1) swim my rig around to waterstart position and almost never (2) lift the sail/mast out of the water, at least up to a 7.5 (never sailed anything bigger.)
1. To turn/rotate the rig, board, or both, I grab 'em and swing my legs and torso around in a big, fast, horizontal circle. Whatever I'm hanging onto rotates the other way. (You WILL hit the fin with your shins, but only once.) It's much simpler and quicker and uses much bigger, more powerful muscles.
2. At just 5'9", my natural boom height lets my boom rest on the tail of every board I've ever sailed. Also, my luff sleeves are snug, so no significant water enters; if they were loose, I'd waterstart in a hurry. No lifting required.
Even then, life is SO much easier with some extra flotation, at least in fresh water.
I'm gonna check out that eggbeater kick; that's a new one on me.
Oh, man, my knees don't like that even just sitting here in my chair. That requires young, resilient, healthy menisci, I'd bet.
