I want to go on a Windsurfing Vacation. The girlfriend doesn't windsurf but doesn't care where we go as long as its hot and she can get a tan. I'm not spending the money to go anywhere if I can't windsurf.
Are there any good spots in the Caribbean or Mexico for the Month of May?

I know Hawaii is the best and everyone is going to tell me to go there but last minutes flights aren't going to be cheap.

To OP: it would help to know where you're flying FROM (or when)???

Alaska Airlines from San Jose CA or Oakland has direct flights to Maui
and quite reasonable prices. May is not high tourist season on Maui, so accomodations should be reasonable and fairly easy to get too. (May is prime wind season though)

Well, since you won't go to Maui,

Margarita island is pretty sweet in May, you're girlfriend will be able
to get a tan (but she will have to have a pretty secure body image).
You do have to fly through Caracas, which can be risky if you don't
know what you're doing, but with a little knowledge, plenty doable.

Lake Arenal in Costa Rica is a very windy place. May is the "low wind season" wherein you might actually end up on a 5.5 rather than a 3.2.
If you're thinking of going there, check to see if any rentals are still
available in May, since that's usually when the season winds down.
Typically 75-80 degree air temps year round, plus howler monkeys.

Lake Garda in Northern Italy is pretty sweet and windy in May also.
Warm sunny days, and the town of Torbole has a well deserved
reputation as a pretty healthy party town. The Dolomites are
spectacular! It's also a place where your girlfriend will need to be
comfortable in her own skin.

Just some thoughts.
