This is what I use. I'm sure others have their own favorite cold weather wear.
Bare Polar Dry suit, extra thermal layer or 2 under it if I need it.
7 mil O'Neill booties, with wetsuit sock liners if needed, duct taped to my drysuit.
Glacier Gloves or surfing mittens if needed, palmless mitts on warm days.
Hood, helmet.
Also, when the water gets really cold I usually sail in mostly shallow water, like at Ninigret. I kept notes last year, in my blog, so I can have an idea of what to wear for different temps and how comfy I'm likely to be.
