I would suggest that you still look at how much outhaul you’re putting on. You should not be pulling the sail flat. The sail needs curvature (camber) in order for the airflow to stay attached to the surface (think of the top surface of an airplane wing). Too much outhaul and the sail will have a tendency to stall when oversheeted, causing the twitchieness you described. This will be most apparent when lightly to moderately powered for any given sail size. When fully powered or overpowered you will be less likely to oversheet so it’s not as much of an issue.
The batten you show in the picture also looks like it’s over-tensioned. You need to be careful about putting too much tension on your battens because doing so can permenantly stretch out the sail. In extreme cases, you might even push the batten tip through the webbing at the luff end of the pocket. Tension them enough to take out any vertical wrinkles along the pocket and then just go a tiny bit more. That should be all that’s needed.
