I just bought a new True Ames 70cm formula fin and used it for the first time.

Thought it was fantastic, was using a 9.5 retro in 14 mph winds, so was a bit more than necessary but worked well.

my board is a 2002 starboard GO, 84 cm wide with a 62 cm tail. I weigh 210 lbs.

one of my goals is to thin my equipment down to have just what i need and not much more, to keep the decisions simple.

My question-any guess as to what wind speed this fin would cause control problems with the board? Usual winds i would use it in are 10-20 or so knots.

My aim is really simplicity and if i could stick with the one fin that would be great, right now i don't care about speed.

Well, at 15-20 on my Angulo Sumo, with a 9.5 Retro, I have control
problems with a 70cm fin, but I weight 180lbs, and that board doesn't
have very outboard straps (though the outline is fairly similar to your Go)
You'd think a 62cm fin would be about the limit for control on a board with
a 62cm wide tail. Anyway, at your weight, I'm guessing maybe 18MPH
winds will start to get a little hairy unless you're going far to weather
and then deep down wind.
