Thank you for all of your help.. I got the fin that I needed.. loaded it up and drove an hour away (closest place that had any shops that new anything about windsurfing) a very knowledgeable gentleman told me I had everything I needed.. BUT.. my board was WAY to small to learn on and he hated to be a downer but I would likely never get up on the board. I of course being the optimist that I am tried it anyway on the sound on a nice windy day.. an hour later bloody and bruised.. I could not deny that he was correct. I gave it a damn good try tho! I am going to keep my eye out for a nice long board that I can learn on. Thanks again for all your help.. I WILL BE BACK!

the Fanantic Ultra RAM 310 is 310 cm long, 65 cm wide and ONLY 145 liters from what i can find
I have a much larger Fanatic Ultra CAT which is 374 cm x 66 cm and 210 liters of flotation
Even that monster board is NOT ideal as the first board - even with instruction
for middle weights i now use my BIC Techno Formula which is 267 cm x 94 and 170 liters.
New to the sport heavyweights seem to need even more liters for flotation.
i always say beg, borrow n steal your first ride(s) to see what works
RENT if you can - lots of liters and lots of width
and as others have said - ask , ask , ask
some people say Konas are okay to start, but i cannot comment on that

While you're looking for a longboard (a Kona would be great), I suggest you rent or borrow a beginner board like a Starboard Start. It's good only for the first few times, don't buy it! But since it's so large, it's quite easy to uphaul on them and you will learn this and the other first steps faster.

When you figure those first steps, you'll prefer the longboard because it is stable enough and is way faster off the plane.

I will keep my eye out.. surprisingly.. there is NO one around here that is into windsurfing.. I have searched all the surf shops and posted on craigslist. The closest place is a little over an hour away and they rent but do not provide any lessons.. which is fine.. I am just surprised that I live 20 mins from Pensacola beach and it is just not a thing here. It looks like a freakn BLAST to me!!!
