everything other than my sails is probubly 15 years old, would that make a huge difference for me where I am so green

15 years old, even in sails, is just fine.
YOu still have not mentioned what boards, sails, masts, booms, and fins you have for what winds, so we can't help you.
Kinda like....you go into a car dealership and say your car isn't functioning correctly, without telling the mechanic what is wrong, what car you have.
Need to know the car you have for the winds you sail it in.

All of this is like a beginner/novice snow skier heading to the black runs (bumps or steeps) and trying to become an expert in a few days. It aint going to happen!.

Learning to windsurfing is a lot snow skiing in that the progression is relatively slow. It just takes time to work through the leaning process. You will nail your planing tacks and gybes (small board) after you do a thousand of each. In light winds on a beginner board, you can master the tacks and gybes in a couple of hours. Turning you skis on a green run at 5 mph is a lot easier than on a black run at 20+ mph.

A double black diamond is like a 30 knot wind in heavy chop. Smart beginners/novices will avoid both for some time.

With that said, be persistent, the payoff is great.
