I originally came from a boat sailing background where you just have 1 sail size in ALL conditions.

The answer is YOU only have one board. It is huge.
You need a smaller board to compliment the sails .

Size of 125-135 makes title difference here, unless purchasing new then 125Liters.

Ezzy also is a great answer to your tough sail question.

You also add some additional length to your 460 mast, using a mast EXTENDO, at the bottom, the extension fit ...
